まる means “to stay overnight”: the subject is the person staying, and marks the place. める means “to let someone stay overnight” or “to put someone up”: the subject is the host, and marks the guest.

はく is a counter for nights spent away from home. Its reading changes with the number: 一泊いっぱく is one night, 二泊にはく is two nights, and 三泊さんぱく is three nights. 一泊いっぱく二日ふつか means “two days and one night.”
